Muddle simple syrup with mint leaves in a large pitcher. Add white rum, coconut cream, and ice. Whisk well until completely combined. Pour into a fine mesh strainer set over a large bowl to remove mint leaves. Rinse the pitcher, then pour bowl back into the pitcher for serving. Serve over ice.
