Ready to dip into! The caramelized onions also add a bit of crunchy texture to the dip. The gruyere cheese flavor is very mild, I find it more noticeable as an after taste. If you're an individual who doesn't like very strong cheeses, the gruyere is not pungent like a parmesan or blue cheese. The gruyere also complements the caramelized.

Then add 2 cups caramelized onions, a block of cream cheese, 3/4 cup mayo, 1 1/2 cups shredded mozzarella, and some chives. The gruyere cheese came in a 5 ounce block, so I shredded that and added the gruyere in as well.

Caramelize: At a low heat caramelize the onions until soft and golden brown. Deglaze: Use the Sherry to release the tasty bits from the pan for added flavor. Mix & Combine: Mix mayo, sour cream and gruyere cheese, combine with the onion mixture and add bacon crumbles. Bake: Until bubbling and lightly browned on top. Serve hot.

Once the onions are caramelized, stir them in. Continue to stir until everything is combined - it will come together. Taste the dip and if you need more salt, add it in. This stays great in the fridge if you make it ahead of time - it will thicken up a bit. It is also great served immediately.
