Add the olive oil and let warm. Add in the sliced onions, chopped garlic, thyme, bay leaf, salt and pepper over low heat, stirring frequently. Cook until golden brown, approx. 25 minutes. Add in the red wine and bring it to a boil. Let the wine cook down until all the liquid is gone (stir frequently).

Put sliced onions in a pan with olive oil, salt and pepper. Turn on medium-to-high heat for the first two minutes and stir onions to coat in olive oil. Turn heat down to low-to-medium. Stir off and on for about 20-30 minutes until onions are golden brown. Add the thyme half way through and stir.

It's hard enough to test these recipes without inhaling each and every sandwich - especially since they evolved from my conception.
