These thin rolls are made by making a small strip of sushi rice and one or two ingredients along one edge of a sheet of nori and then rolling it up tightly to form a slender roll. Cut a square nori sheet in half (restaurant-style) or quarter (more home-style) and place it, shiny side down, on your palm. Instructions. Make the sushi rice: Cook the rice according to the package instructions, or use our Instant Pot Rice recipe (use 2 cups sushi rice and 2 ½ cups water). Wrap the roll in the makisu with the seam of the roll facing down. Use your hands to apply even pressure to the mat to set the shape of the roll.
