Classic Vegan Korean Rice Cake Soup! Growing up, Korean Rice Cake Soup, or Dduk Guk (๋–ก๊ตญ) was a classic comfort dish I ate frequently so I had to take a stab at making a Vegan Dduk Guk. Traditionally, the recipe is actually quite simple. It is made with a light broth of either anchovy or beef with chewy Korean rice cake, sliced egg and seaweed to top.

Bring to a boil, reduce heat, and simmer, uncovered, for 30 minutes. Strain. To make soup. Bring broth to a simmer. Add dduk and simmer for 20 minutes. In a small bowl, combine scallions and egg. Add to the pot and stir until distributed. Tear and crumble seaweed into the pot and stir until combined. Serve hot.
