Tog chowder happens to be a cold weather favorite in the Northeast. Its a filling dish that will warm you up on the coldest of nights. Here is an easy follow.

Add garlic; cook 1 minute longer. Stir in the potatoes, water, clam juice, bouillon, pepper and thyme. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 15-20 minutes. In a small bowl, combine flour and 1 cup half-and-half until smooth. Gradually stir into soup.

Add potatoes to the pot and cook until almost tender. Stir in heavy cream. Depending on consistency and quantity desired, add milk if needed. Simmer for 10 minutes. Add tautog fillets. Cover and turn heat o heat; let stand covered for 20 minutes to steam sh while not overcooking it, which will make it tough.

Bring to a simmer, then lower the heat to medium and cook, covered, until the potatoes are almost done, about 10-15 minutes. Heat the cream: In a separate pot, heat the cream until steamy (not boiling). Add the fish to soup, add hot cream: Add the fish to the pot of potatoes and add the heated cream. Return to the stove.

Tog are a heavy bodied saltwater fish. They live/hide around rock piles and shipwrecks, have thick skin and a pretty heavy slime coat to protect them from the same. We fish them anchored up (as opposed to on the drift) and use peeler/green crabs as bait. Their natural food is all types of shellfish.

Cornstarch: If you want to use cornstarch to thicken your chowder, you'll need to make a slurry first. Simply mix the cornstarch with equal parts cold liquid (like water or stock), then add the mixture to your chowder. While cornstarch is the fastest way to thicken a chowder, it's also flavorless and won't do much to enhance it otherwise.

With chowder, beer seems to be a natural. And for all things seafood, you can't go wrong with the Narragansett Lager. The malty smoothness and crisp refreshment of the lager pairs well with most fish dishes, and is even used in a lot of fish preparations, such as in making batters and in cooking mussels. The Narragansett Lager is also the "Official Beer of the Clam," but maybe it can be.
